Recipe: Honey Walnut Muffins

Recipe Honey Walnut MuffinsI am trying to create more healthy foods that my kids will eat so you are going to see some more recipes here of things I dream up and try on them. This week I thought I would try to make a healthy muffin that they might eat for breakfast. I wanted it to have no added sugar but obviously like everyone else my kids love sweets. This recipe is not overly sweet so if you are used to very sweet muffins you may want to tweak this recipe a bit.

ingredientsI used flax seed in this recipe to add omega-3 fatty acids, these good fats that have been shown to have heart-healthy effects. Flax seeds also give you both soluble and insoluble fiber which is an important part to anyones diet especially if you are not able to make all your meals yourself. I purchase flax seeds in the bulk section at the grocery store it is vary affordable. I take the full seeds and place them in my coffee grinder set to espresso setting to be able to grind it very finely.

Honey is a great substitute for sugar, it is my go to for a substitute. If you are more comfortable with agave syrup or other natural sweeteners feel free to sub it out.

The dates are also a great substitute for sweetener in a recipes, this natural food is easy to find and is just the right level of sweetness. Dates, while sweet, have been shown to not raise your blood sugar levels the way other sweeteners do. They also are high in fiber and help lower your triglycerides.

So as you can see these yummy muffins are not just good to eat but they have ingredients that will not hurt your health.

Instructions
  1. Preheat the oven to 350 degrees. If you oven runs hots set it a little lower, when baking with honey lower heat is better. Line a muffin tin with liners.
  2. Measure the flour, baking powder, flax seed, baking soda, walnuts, and dates in a bowl and set aside.
  3. Mash the bananas till they are completed smashed up in a separate bowl. Add the honey, egg, yogurt, and olive oil and mix well.
  4. In the bowl with the dry ingredients make a well in the middle and add the wet ingredients. Stir until mixed. I do not recommend using your mixer for this but if you do just have it on stir mode. Do not over mix.
  5. Spoon the sticky batter in the the muffin liners and fill to the top. Bake for 20-25 minutes until it rises and gets a light golden color. Let them cool.
Recipe Notes

These freeze very well and can be kept in the fridge for a few days and warmed up in a toaster oven. Contains nuts and eggs.
